Boot Gumbo


  • 1/4 cup Butter
  • 1/8 cup chopped garlic
  • 1# Andouille Sausage
  • 1# chopped shrimp
  • 1 cup sliced okra
  • 1/2 cup fresh diced onion
  • 1/2 cup fresh diced red pepper
  • 1/2 cup fresh diced celery
  • 1/2 cup fresh chopped green onion
  • 1 qt beef stock, or broth
  • 1 qt chicken stock, or broth
  • 1/4 cup hot sauce
  • 3 Tbl Creole seasoning ( Tony Chachere's is a good one, because of the salt content.)
  • 1/4 cup Worcestershire


In a large stock pot, melt butter add garlic, sausage, shrimp,{} and saut {}3 to 4 minutes.

Add flour, and stir to create a roux. Let cook for about 3 minutes. Add vegetables and stock the rest of the ingredients.

Stir occasionally until the Gumbo thickens, and vegetables are cooked.

You can also add crawfish tails or chicken if you wish to. Just add in the first steps!
