      Crunchy Quinoa Salad

      INGREDIENTS

      {}

      2 cups quinoa (dry)

      1 large English cucumber, diced

      1-2 lb spinach, sliced

      1/2 red onion

      1 can chick peas

      1 cup dried cherries, chopped

      1 1/2 cups slivered almonds

      Dressing:

      1 cup orange juice

      1/2 cup red wine vinegar

      1/4 cup oil

      2 TB agave or raw sugar

      1 TB coriander

      2 TB cumin

      1 TB garlic powder

      1/4 cup of dried parsley

      juice of 1/2 lemon

      salt to taste

      TO PREPARE:

      1. Cook quinoa in 4 cups of water, add cumin,coriander, salt, garlic powder and powdered veggies broth. Bring to a boil,turn on low till water is evaporated. Cool.
      2. Prepare dressing. Taste and adjustseasonings
