Edible insects could become part of your diet

Here is a new answer to the question, "what's for dinner?" Consider serving up a helping of edible insects.

The UN's Food and Agriculture Organization, headquartered in Rome,{}just released a report on the global fight against hunger. The report surmises the world's population needs to consider insects. For most Western cultures, the idea of eating "bugs" sounds revolting. In fact, western countries are in the minority when it comes to making insects a part of a daily diet. More than two billion people, largely in Asia, Africa, and Latin America, already do so.

The possibilities are staggering. There are at least 1900 "edible insect" varieties. Some of the most popular include red ants, grasshoppers, water beetles, bees, wasps, crickets, and cicadas. The insects are high in protein and low in fat.

Current food production will need to almost double by 2050 as the world's population surges to nine billion. Insects are one prospect for feeding people and livestock.
