Ingredients:Heavy Cream - 2 cupsMilk - 1 cupSugar - 1/4 cp.Vanilla Bean - 1/2Egg Yolks - 2/3 cupSugar - 1/4 cp.
Directions:1 - Heat milk, cream, 1st amount of sugar and vanilla bean in heavy bottom pot and heat till steamy.
2 - Mix egg yolks and 2nd amount of sugar in bowl
3 - Temper egg yolks and hot cream mixture, mix well, strain
4 - Pour into ramekins place in water bath
5 - Bake at 300 mini brulee for about 30 mins. Larger brulee for 40-50 mins.
6 - It will not be firm in oven you want a jello kind of jiggle.
