      Kathy G's Summer Salad

      4 cups medium diced watermelon(seedless)

      4 cups medium diced ripe tomatoes

      1/4 cup chopped fresh mint

      1/3 cup balsamic vinegar

      1/4 cup honey

      dash salt

      1/2 cup crumbled feta cheese

      Combine Watermelon and Tomato inmixing bowl, mix balsamic and honey in separate bowl, add to watermelon tomatomixture, add chopped mint

      Dash salt

      Toss and serve immediately, Sprinklewith feta on top

      Serve over baby spinach leaves whichhave been tossed with 1/4 balsamic vinegar, 1/4 cup olive oil, salt and crackedpepper
