Mediterranean Potato Salad

Red Skin PotatoesGrilled red onions -{}2 smallRoasted Red Peppers{}-{}4 dicedKalamata Olives -{}1 pint, cut in 1/2Peeled Shallots -{}fine dicedExtra Virgin Olive Oil -{}4{} cupsTarragon Vinegar -{}1.5 cupsArtichoke Hearts -{}2 cups quarteredFresh Basil{}-{}2 Cups sliced thinFresh Parsley -{}1 cup choppedSalt and pepper -{}to taste{}

In a large mixing bowl mix all ingredients with the warm boiled potatoes, and salt and pepper. Taste for salt and pepper.
