      Pan Seared Tilapia with Garden Vegetable Salsa

      Ingredients

      {}{}{}{}{}{} 2 oz. Zucchini

      {}{}{}{}{}{} 2 oz. Yellow Squash

      {}{}{}{}{}{} 2 oz. Diced Red Onions

      {}{}{}{}{}{} 2 oz Tomatoes

      {}{}{}{}{}{} 2 oz. Broccoli Florets

      {}{}{}{}{}{} 2 oz. Yellow Corn

      {}{}{}{}{}{} 1 tbsp. Chopped Fresh Basil

      {}{}{}{}{}{} 1 tbsp. Chopped Garlic

      {}{}{}{}{}{} 1 tsp. Fresh Chopped Parsley

      {}{}{}{}{}{} 1 oz. Extra Virgin Olive Oil

      {}{}{}{}{}{} Juice of 1 Lemon

      Directions

      {}{}{}{}{}{} Take 4 oz filet of tilapia and pat dry

      {}{}{}{}{}{} Lightly season to taste with sea salt and black pepper

      {}{}{}{}{}{} Heat 1 oz. of olive oil in a non-stick pan

      {}{}{}{}{}{} Add tilapia and sear on one side for 3 min. or until golden brown

      {}{}{}{}{}{} Flip and repeat

      {}{}{}{}{}{} Remove from pan and add salsa
