Potatoes Hampton - Recipe
25-30 Small Red Potatoes1/2 lb. mild sausage (cooked and scrambled into small pieces)1 1/2 cup shredded Colby Jack cheese1/2 cup sour cream1 stick butter5 green onions choppedSalt & Pepper
Bake the potatoes until tender. Cool to the touch, and slice each in half, scoop out the cooked potato inside. Place the scooped potato into a mixer with a paddle. Add the next six ingredients until thoroughly mixed. Don't over mix. If you find the mixture is too thick, add extra butter, and sour cream.
Spoon mixture into hollowed potato halves. Bake at 350 until hot and bubbly.
