      King Mackerel Steaks w/ Tomato-Wine Sauce (6 servings)

      {}

      ingredients:

      6 (3/4 inch thick) king mackerel steaks

      2 tbsp melted butter

      1 tsp salt

      1/8 tsp pepper

      Paprika

      Tomato-Wine Sauce (recipe below)

      preparation:

      -rinse fish thoroughly in cold water. pat dry.

      -place on greased rack in a broiler pan and brush w/ butter, sprinkle with salt, pepper and paprika.{}

      -broil 5 inches from heat for 5 minutes, turn and baste w/ tomato - wine sauce

      -broil an additional 5 minutes or until fish flakes easily with a fork

      -serve immediately with remaining sauce

      TOMATO - WINE SAUCE

      1/2 tsp sugar

      4 medium tomatoes, peeled and cut into wedges

      1/4 C chopped green onion

      2 cloves garlic, minced

      1/2 C plus 2 tbsp butter, divided

      1/2 C dry white wine

      2 tbsp chopped fresh parsley

      1/4 tsp salt

      1/8 tsp pepper

      preparation:

      -sprinkle sugar over tomato wedges, set aside

      -saut onion and garlic in 2 tbsp butter in a large skillet. Add wine and stir until blended

      -simmer uncovered for 10 minutes, stirring occasionally

      -add prepared tomatoes and remaining ingredients

      -cook over low heat, stirring frequently, until butter melts

      Chicken Apple Arugula & Goat Cheese Salad

      {}

      ingredients:

      -olive oil

      -1 large shallot, peeled & sliced

      -1 1/2 lb skinless, boneless chicken breast, cut into 1 inch cubes

      -salt

      -1 tart green apple, thinly sliced

      -baby arugula leaves - enough for salad for 4

      -1/4 C toasted walnuts, rough chopped

      -1/4 C goat cheese - broken up into small pieces

      -lemon juice

      -salt & pepper

      preparation:

      -heat 1 tbsp olive oil over medium{} heat.{} add shallot and saut until translucent. remove shallot from pan

      -add another tbsp. olive oil and saut chicken pieces, stirring occasionally,{} until just cooked through

      -sprinkle with salt while cooking. remove from pan and chill

      -toss together in a serving bowl shallots, chicken, apple, arugula, walnuts and cheese. Dress with olive, lemon juice, salt and pepper
