      "I Didn't Know I Liked Kale" Salad

      Serves 4-6

      12 oz. fresh kale, chiffonade

      3 cups red grapes, halved

      1/2 red onion, sliced thin

      1/4 cup lime juice

      1 teaspoon sea salt

      2 tablespoons extra virgin olive oil

      2 tablespoon honey

      2 tablespoons cilantro, chopped

      1 garlic clove, smashed into paste

      1/2 teaspoon ground cumin

      1 avocado, diced

      Pumpkin seeds for garnish


      Place kale in large bowl, add in grapes and onions.{} In a small bowl, combine the lime juice, salt, oil, honey, cilantro, garlic and cumin with whisk.{} Pour dressing over kales and massage mixture with your hands.{} Spread on platter to serve, top with avocado and pumpkin seeds, if using.{}


      Eat & Defeat Quinoa

      Serves 4

      1 cup quinoa, rinsed3 cups unsweetened almond milk1/2 teaspoon vanilla1 teaspoon cinnamon1/4 teaspoon allspice1/2 cup golden raisins1 med apple chopped small Natural sweetener to taste1/2 cup raw walnuts, chopped4 tablespoon sunflower seedsFresh raspberries or fresh strawberries


      Combine quinoa, almond milk, cinnamon, allspice, raisins and apple in a rice cooker.{} Taste for sweetness and adjust to your liking, when finished cooking. {} You may not need any additional sweetener as the raisins and apple do add a nice sweetness that may be just perfect for you.{}


      Top each serving with walnuts, sunflower seeds, and other fresh berries
