      Recipe Sept. 11 ... Healthy Tailgating

      "Frito Lay Bean" Dip

      Makes about 2 cups

      1 (15 oz.) can cannellini beans, drained and rinsed

      1 cup salsa

      1/2 cup nutritional yeast


      Place all ingredients in a food processor and process until smooth.{} Serving suggestions:

      • Use as spread for sandwiches
      • Use in layered dip
      • Eat with fresh veggies, like broccoli or carrots


      Black Bean & Corn Salsa Soup

      Serves 4-6

      1{}(12 oz.) jar salsa verde

      1 large onion, chopped

      1 (15 oz.) can Fire Roasted Tomatoes with Garlic

      2{}(15 oz.) cans black beans, drained and rinsed

      Kernels from 2 ears of corn or 2 cups frozen corn, thawed

      4 cups no salt added chicken broth

      1 1/2 {}teaspoons{}ground cumin

      1 tablespoon chili powder

      1/2 teaspoon smoked paprika, optional

      3 cups cooked chicken, optional

      Salt & black pepper to taste

      Green onions, chopped (garnish)

      Plain Greek yogurt (garnish)


      Place the salsa and onion into a large saucepan over medium/high heat and cook for about 5 minutes.{} Then add in tomatoes, beans, corn, broth, cumin and chili powder. {}Bring to a boil, lower heat to a simmer, and cook for 10 minutes, stirring occasionally. {}If using, add in smoked paprika and chicken and simmer until chicken is warmed.{} Season with salt & black pepper to taste.{}


      To serve, ladle soup into bowls, put a dollop of yogurt and sprinkle with green onions.


      Creamy Chipotle Beans & Corn Salad

      Serves 4-6

      1/4 cup fresh cilantro, chopped

      1/4 cup plain Greek yogurt (not fat free)

      1/2 teaspoon chipotle powder

      1/2 teaspoon ground cumin

      1/2 teaspoon chili powder

      1 tablespoon lemon or lime juice

      1/4 teaspoon salt

      1 (15 oz.) can dark red kidney beans, drained and rinsed

      1 (15 oz.) can corn, drained and rinsed

      1 cup celery, chopped

      1/2 cup green onions, chopped

      1 cup cherry tomatoes, halved


      For the dressing, whisk together the first 7 ingredients in a small bowl.{}


      In a large bowl, combine the beans, corn, celery, green onions and tomatoes.{} Pour dressing over bean mixture and toss gently to coat.


      Add in's"

      • Chopped avocado
      • Cooked chicken
      • Prepared whole grains such as quinoa or rice, may need to double dressing for this addition
      • Mixed lettuces, may need to double dressing for this addition
