2 cups Bisquick, or other biscuit baking mix
2/3 cup milk
1 # Dean's sausage, hot or mild, cooked and crumbled
Preheat the oven to 400 degrees. Mix together baking mix and milk into a soft dough and knead on a floured surface about 10-12 times. Roll dough out into a rectangle about 1/4" thick. Cover dough to 1" from long ends edge. Roll in jelly roll fashion and seal by pinching edges together. Cut about 1/2" and place cut side down on ungreased baking sheet. Bake 12-15 minutes or until done. These freeze well cooked or uncooked.
Sausage and wild rice soup
1 c. wild rice
3 c. water
1 # Dean's sausage
1 large yellow onion, small dice
2-3 stalks celery, small dice
1 1/2 cups sliced button mushrooms
1 can, 28 oz., diced tomatoes
64 ounces chicken broth
12oz. Cart Barn Light, Back Forty Beer Company
2-3 T. olive oil
2 T tomato paste
salt and pepper
1 Bay leaf
1 t Italian seasonings
Heat water to a boil and add rice and 1/2 t salt. Cook for about 1 hour or until rice is tender. Separately, in a large pot cook sausage and break up as it cooks. Remove sausage with slotted spoon and set aside. Cook mushrooms, onions, and celery, in batches, adding olive oil when needed. After all veggies have been cooked until softened add everything in pot together and let simmer for 20-25 minutes, uncovered. Remove bay leaf before serving. Best served with cold Cart Barn!
